Cookie Dough Base

I will be visiting a very special friend of mine tomorrow and decided to bake some cookies for them.   And if you know me I like variety, I have the palate of an ADD person, so I made three varieties of cookies. I think being Indian I am spoiled into having so many different items on one plate, each bite is always a different taste!

I think the most important part of a cookie is the base dough, or the dough without any of the important stuff in it like the chocolate chips and nuts. My mom always told me how the higher the percentage of brown sugar to white sugar, the chewier the cookie will be, and she is right. Here is my recipe for the yum yums I made for my friend’s tum tum. 🙂

Serves- 3 dozen                                        Cook time- 1 hour    

Base Cookie Dough

2 sticks of butter

1/2 cup of sugar

1 1/3 cup of brown sugar

2 teaspoons of vanilla

2 eggs

3 cups of flour

3/4 teaspoon of salt

1 1/2 teaspoons of baking soda

 

Preheat oven at 350 degrees

1. Take the 2 sticks of butter and cream it, mixing very well. This is an awesome work out for your arms, so let the Kitchen Aide mixer have a day off and work them muscles!

2. Add the white sugar to the butter and mix well. Add the brown sugar to the butter and mix well. Make sure everything is well incorporated and creamed!

3. Add one egg at a time and mix in between additions. Add the vanilla and mix in as well.

3. In a separate bowl, mix the flour, baking soda, and salt. I love adding 1 tablespoon of cinnamon to this mixture or even chai masala, which makes the cookies taste and smell A-MAZING!

4. Add the flour mixture slowly and mix well, continue working those biceps and triceps! Towards the end I always end up using my hands to get all the flour into the dough. It should be a nice soft ball of dough.

5. Now you can just add whatever candies, nuts or yum yums you want into this dough and have 1 cookie flavor OR you can do what I do. Split the dough into 3 equal parts into different bowls. I added Reese’s Pieces, walnuts, and chocolate peanut butter swirl chips to one bowl, butterscotch chips and salted cashews to another, and finally 2 tablespoons of nutella, 1/2 tablespoon of cinnamon, and chocolate chips to the last bowl.( Each “ball” of dough usually makes about 1 dozen)

6. Drop spoonfuls onto an ungreased baking sheet and bake at 350 for 10-12 minutes. The edges of the cookies will be brown while the middle a little soft. This will set when the cookies cool, leaving you with crunchy edges and a chewy middle. Let cool and enjoy!
