It’s that time of the month again! It’s my Leftover’s Club  post! This month I’m swapping with Elizabeth from Cooking with Milton. She has an amazing food blog where she cooks with her cute furry dog, Milton.  This month’s theme is chocolate, which I am ALL about.  Seriously, I want to get chocolate wasted everyday. #lifegoals

She mentioned that she loved Reese’s peanut butter cups and the wheels in my head started turning. I ended up making her white chocolate truffles with my homemade cookie butter in the center! I guess I’ve been on a cookie butter kick lately since I made cookie butter stuffed cookies last week. I used a silicone candy mold I got from Amazon. However; if you don’t have one you can freeze the cookie butter, roll it into 1 inch balls and dip them into chocolate. I decorated mine with edible glitter dust and they came out super cute. I was pretty impressed with myself! I used Ghirardelli’s melting chocolate so I didn’t have to mess with tempering chocolate, which made it easier to make.

It has a nutty, cinnamon taste and they would be perfect as a gift for teachers this fall. I hope Elizabeth enjoys them!

Cookie Butter Truffles


  • Total Time: 30 minutes
  • Yield: 12 truffles 1x

Instructions

  1. Melt white chocolate in a microwavable bowl in 10 second spurts until completely melted.
  2. Brush the inside of the mold with white chocolate. Freeze mold for 2 minutes and brush on another layer. Freeze again for 2 minutes.
  3. Fill each mold with 1 tsp of cookie butter and top with more melted white chocolate.Tap the mold to release any air bubbles and freeze until set.
  4. Pop the truffles out of the molds. Brush with edible glitter for decoration.

Notes

I froze the cookie butter for 2 hours prior to making them to make it easier to work with.
