Jackfruit BBQ Sliders

 

Looks like pulled pork right? Well, it’s not! It’s pulled jackfruit! Which makes this vegan/vegetarian! My husband and I have close friend who are moving away to England and I decided to make dinner for them before they leave. They always throw amazing dinner parties for us and it wanted to reciprocate before they left for London.

I ended up making a full southern comfort dinner, complete with sweet tea, hush puppies, mac n cheese and biscuits. I never had BBQ before (obviously) and I’ve seen people using jackfruit has a pulled pork substitute so I thought I’d give it a try.

Jackfruit is a giant starchy fruit that originates from India. Unripe jackfruit can be used as a meat substitute, while ripe jackfruit has a fruity mango/pineapple tasting flesh. I found canned young jackfruit at my local asian store, but you can also get it online at Amazon and at most Whole Foods.

The shredded jackfruit really does end up looking like real meat. I wasn’t sure how close it was to the real thing so I had my friend Casey try the sliders and she gave me a HUGE thumbs up. She said it was pretty close to pulled pork and she almost couldn’t tell that it was vegetarian. Success!

This would be a great crock pot recipe. Just add everything to a crock pot with 1/2 cup of water and set on low and cook for 6-8 hours. You’ll have a tasty, healthy, vegetarian dinner on the table with little to no effort!

Jackfruit BBQ Sliders

Ingredients

Scale

Coleslaw

  • 14 oz of coleslaw mix
  • 1/2 cup plain greek yogurt
  • 1/4 cup mayonnaise
  • 1 tsp apple cider vinegar
  • 1 tsp Dijon mustard
  • 1 tsp horseradish
  • 2 tbsp grated onion
  • 2 tsp sugar

Sliders

  • 1/2 tbsp vegetable oil
  • 5 garlic cloves, minced
  • 2 cans jackfruit, drained and rinsed
  • 3 cups BBQ sauce
  • 1/2 tsp ground cumin
  • 1/2 tsp red chili powder
  • small slider buns


Instructions

Coleslaw

  1. Add all ingredients to a large bowl. Add salt and pepper to taste and mix well. Refrigerate until ready to use.

Sliders

  1. Heat oil in a large saucepan on medium heat. Once oil is hot, add garlic and saute for 1 minute. Add drained and rinsed jackfruit, your BBQ sauce of choice, cumin,chili powder, salt and pepper to taste. Stir until the jackfruit is completely coated. Bring to a boil, then lower the heat and simmer for 2-3 hours on low heat. Stir every 20 minutes and add 1/4 cup of water at the 1 hour mark. Once done, use a fork and pull the jackfruit apart to shred it.
  2. Toast the buns and add a big spoonful of the BBQ jackfruit to the bottom bun. Top with coleslaw and top of the bun. Enjoy!

Notes

use dairy-free yogurt and mayo to make this vegan!
