Summertime = cold drink time. At least for me. But most of my weekends are spent running after my 1-year-old and there isn’t much time for me to sit down and enjoy a warm meal. (Parent’s of toddlers, you know what I’m talking about) But I do have time for a quick, cold drink!

Iced Lemon Ginger ChaiI recently was at Walmart getting some summer picnic supplies with I stumbled upon Tazo® Chai Latte Concentrate in the coffee and tea aisle. I grabbed a box and made some plans for it!  I decided to take my favorite drink, lemonade, and give it a spicy chai twist for the summer! I used fresh ginger to make a quick ginger simple syrup and I was on my way to a relaxing treat!

Iced Lemon Ginger ChaiThis recipe is so simple, and you can save the ginger simple syrup in your fridge for up to one week so you can make a drink whenever you can grab a moment for yourself!

My summertime sippable moments are on the weekends when my family decided to take a nap. Yes, my husband takes mid day naps. 🙂  Because let’s be real, if you’re a working mom like me, relaxing moments only come during nap times on weekends. I like to kick back, catch up my favorite show, grab a refreshing drink and just relax! What do you do for your relaxing “me time”?

Instructions

  1. Add water, sugar and ginger to a saucepan over medium heat and bring to a boil. Simmer for 5 minutes. Stir continuously making sure all the sugar is dissolved. Strain the ginger simple syrup into a clean jar. Let cool.
  2. To make the drink, add lemon juice, Tazo® Chai Latte Concentrate, 2 cups of water, ginger syrup to taste to a pitcher. Stir well. Pour into a ice-filled glass. Enjoy!
