It’s almost July! I feel like this year has been just been flying by! To celebrate 4th of July and all things summer, I partnered with Safeway and General Mills to show off how to make a healthy and nutritious treat for yourself! 

Berry & Granola ParfaitI like to follow the basic rule of shopping in the perimeter of a grocery store where the produce and dairy is 80% of the time, and buying natural and organic options from the middle 20% of the time. Some of my “middle of the grocery store” favorites are plain yogurt, granola, oatmeal and frozen fruit (for smoothies)!

Berry & Granola ParfaitThe berries this summer have been so sweet and delicious! Elara has been eating her weight in blueberries!  She’s a fiend I tell you! I paired my fresh berries with Mountain High plain yogurt and Cascadian Farm Organic Granola to make a festive red, white and blue parfait!

Berry & Granola ParfaitThis is a super quick and easy breakfast or snack that you can throw together in a few minutes! I like to use plain yogurt so I can control the sweetness with honey. However, if you hate plain yogurt, Mountain High has a delicious Vanilla flavored yogurt that you can use as well!

Berry & Granola ParfaitI like my granola to have lots of texture, so I used Cascadian Farms Fruit & Nut Granola. It’s loaded with whole grain oats, raisins, cranberries, sliced almonds, roasted pumpkin seeds and sunflower seeds! So much flavor and crunch – yumm! The best part is that the yogurt is made with real California milk, making it local!

  • Yield: 2-3 servings 1x

Instructions

  1. Add yogurt, vanilla extract and honey or your choice of sweetener to taste to a small bowl and mix well.
  2. Spoon ¼ cup of yogurt into the bottom of your jars. Top with 2 tbsp of granola, 1 tbsp of blueberries and 1 tbsp of chopped strawberries. Repeat the layers one more time. Enjoy right away or refrigerate overnight for a make-ahead breakfast, keep in mind that the granola will soften slightly overnight!
