LIFE UPDATE! So remember a few months ago when I mentioned that I’d be moving to NYC? Yeah, well not happening anymore. Why you say? My husband went to a concert and had an epiphany that he hated NYC and that we ” have deep roots in SF.” Unfortunately, my job has gone through a reorganization with the thought that I was leaving, making my role obsolete. -_- 

Carmelitas RecipeLuckily, I was able to find a part-time opportunity as a digital marketing manager at Humphry Slocombe (#freeicecream) and Chewse was kind enough to extend a part-time position as a content and social media manager to me. Two part-time jobs = 1 full-time job! Woohoo!

Carmelitas RecipeThe only issue now is that we are WAYYYY behind on preschool applications for Elara. Like, I’m pretty sure our kid isn’t going to preschool. Turns out about 98% of the preschools near us in SF are full. Which means our only hope is getting in through a waitlist. A friend of mine gave me some advice and told me it’s all about bribing and leaving a good impression with the admin at the preschools. Preschool waitlists are not first-come-first-serve, it’s all about who they think are good parents and who would contribute positively to their school.This started Operation Get Elara in Preschool.

Carmelitas Recipe I have an open house coming up this week so I made these carmelitas to drop off at the front desk to sweeten the deal. You attract more bees with honey, right? My plan is to keep dropping off sweets every week to our top 5 preschool choices until they give in! Who knew getting your kid into a preschool was so hard?!

Every article I read makes it sound like if your kid doesn’t go to pre-school at the age of 2 then they will never succeed in life. That’s a lot of pressure! Hopefully, my plan works, I’ll give you guys an update later on! Until then, I plan on binge baking for the next couple of weeks!

Carmelitas


  • Total Time: 50 minutes
  • Yield: one 8x8 tray, 18 triangles 1x

Ingredients

Scale

Dulce de Leche

  • 1 can condensed milk

Carmelitas

  • 1 cup all purpose flour
  • 2/3 cup rolled oats
  • 1/3 cup dark brown sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • 1/2 cup dulce de leche
  • 1/2 cup chopped nuts ( I used almonds and pecans)
  • 3/4 cup dark chocolate chips
  • 1/2 tbsp flaky sea salt (ex. Maldon)


Instructions

Dulce de Leche

  1. Peel wrapper off can of condensed milk. Place can in a heavy bottom pot. Fill pot with water so the water is only 2 inches above the can. Bring water to a boil and them simmer for 3 hours. Top the pot off with water every 30 minutes.
  2. After 3 hours, remove can from hot water and let cool completely before opening!

Carmelitas

  1. Preheat the oven to 350 F. Grease an 8×8 baking pan and line with parchment paper.
  2. Add all purpose flour, rolled oats, dark brown sugar, softened butter, salt, and baking soda to a medium bowl. Mix well until you have a crumbly dough.
  3. Press 1/2 the mixture into the bottom of the greased 8×8 pan. This layer will be super thin (1/4 inch thick). Bake for 8 minutes. Remove from oven and set the base aside.
  4. Microwave the dulce de leche for 1 minute, stirring at 30 seconds. Sprinkle chocolate chips evenly on top of the base. Let this sit for 3-5 minutes so the chocolate starts to get soft. Use a spatula to spread the chocolate evenly, Drizzle the dulce de leche over the chocolate and use a the spatula to spread it evenly. Sprinkle chopped nuts and flaky sea salt on top. Take the rest of the dough and evenly sprinkle the crumbly dough on top.
  5. Bake for 15 minutes. Remove and let cool completely before cutting. Store in a air-tight container for up to 3 days.
  • Prep Time: 10 minutes
  • Cook Time: 40 minutes
